The steep Honigberg site is alive with the hums of honeybees and bumblebees.
Its magnetic attraction comes in no small part thanks to a flourishing carpet of herbs and wildflowers that stretch out under the vines.
That floral welcome mat is no coincidence. It is the product of a special seed mix devised by the winemaker specifically to promote vibrancy in the vineyard.
Timo Dienhart combines winemaking with the active protection of bees. Anyone seeking evidence that production in harmony with nature is a recipe for success need only explore the prize-winning Rieslings of his “Edition bee” or “Timo Dienhart” wines.
The estate has been certified organic since 1995 and is a member of the Ecovin association.
The estate name plays on the Roman pressing house from the second century excavated in Maring-Noviand. The family-run business today relies on a modern solar energy system for processing of the grapes, cooling and heating.
The spacious new buildings around the pressing house are generally popular for events. Guest rooms are available in the estate house from 1887, with an optional culinary wine tasting alongside a 4-course menu.
Guided vineyard tours are also offered for those interested in experiencing biodynamic winemaking first-hand.
